Satrangi Zarda Recipe


  • 3 cups of Rice
  • Few drops of Zaffrani Kewra
  • Half a cup Sugar
  • 5 Small cardamom 
  • Half a cup Dry fruit
  • 1 cup of Khoya
  • 1 pinch of Yellow (Zarda) food color
  • 1 pinch of Red food color
  • 1 pinch of Green food color
  • 1 cup clarified butter


  • Wash 3 cups of rice and then soak for about 2 or 3 hours.
  • Pour 12 cups of water in a large pot and add a few drops of kewra essence and 2 cardamom and  to it and boil. When water is boiled add rice into it and cook until rice gets ready.
  • Put one cup of  butter in a pan and saute with 3 small cardamom. Now add some water and a half cup sugar.
  • Cook it until sugar is dissolved. Now divide rice into three parts and put a pinch of red , green and zarda color in the rice separately. Put all three colored rice in to the pot and add dissolved sugar into it, cook for few minutes that formed a colorful texture and then add 200 grams of murabba, half cup of khoya and dry fruits into it. Mix it well and simmer.
  • Garnish the Satrangi Zarda with remaining khoya, dry fruits, silver paper and serve hot.
