Hyderabadi Mutton Biryani

Ingredients

  • Mutton 1 kg
  • Rice 1 kg
  • Hot Milk 1 cup
  • Yogurt 1 cup
  • Clarified Butter 1 cup
  • Cloves 4
  • Onions (chopped) 4
  • Lemons 6
  • Black Peppercorns 8
  • Green Chilies 6
  • Small Cardamom 8
  • Yellow Food Color a pinch
  • Mint Leaves (chopped) 1 bunch
  • Caraway Seeds 1 tsp
  • Red Chili Powder 1 tbsp
  • White Vinegar 1 tbsp
  • Papaya Paste 2 tbsp
  • Salt to taste
  • Ginger Garlic Paste 1 ½ tbsp

Method

In a pan, take 1 kg oil and add in 2 tbsp raw papaya paste, 1 ½ tbsp ginger garlic paste, 1 tbso red chili powder,  small cardamom, 4 lemons, mint leaves, 8 black pepper, 4 green chilies and cloves mix it and marinate mutton in it for ½ an hour.
on a low flame cook it until the water dries.
heat some oil in the separate pan and add chopped onion in it and fry it until it gets goldan. Take it out and let it dry.
Add that hot oil in the meat. In a pan, boil 1kg oil, 3 green chilies, mint, 1 tsp black cumin, small cardamom, salt and 1 tsp white vinegar. Now boil it and drain the water.
Grease the pan and layer the rice in the bottom that add meat mixture in it and spread it.
Now add the crushed fried onion in it. Then layer the remaining rice add some lemon juice. Add hot milk, remaining crushed onion, food color, 1tsp clarified butter. Simmer it for 5-10 minutes on a low flame. Serve Hayderabadi mutton biryani with achar.
